Bondar’s Chardonnay is sourced from the 30-year-old Rathmine vineyard in Echunga, which sits at 450 metres above sea level on stony, shallow clay loam over a limestone base. All of Bondar’s fruit is hand-picked in the cool of early morning, whole-bunch pressed and fermented naturally in French oak (approximately 25% new). All barrels were allowed to go through malo naturally until the balance of acidity was spot on. To preserve the purity of fruit there was no lees stirring.

Reviews

"A powerful chardonnay with plenty of ripe-melon, peach and nectarine fruit drive. There’s a flinty edge and glossy oak thread here, too. Some pithy lemon drives the finish. Drink or hold. Screw cap."
92 points, Nick Stock, jamessuckling.com
“All the cashew and almond, white flowers and vanilla, stone fruit and nashi pear, a subtle mint coolness. It’s glossy, layered and complex, but shot through with tight ripe lime acidity, and finishes savoury and creamy. A wonderful expression of Chardonnay here. All just so.”
94 points, Gary Walsh, The Wine Front
“All the bells and whistles applied with aplomb, from the smoky, creamed cashew nose of barrel fermentation to the generous mid-palate flecked with crystalline mineral shards, pungent miso and candied cumquat. White peach and nectarine scents teem long across a juicy trail, just fresh enough. Light-years away from any thin, linear expression. A chardonnay of intense flavor, full malo generosity and enough tension to confer sophistication. Drink or hold. Screw cap.”
