Bondar’s Fiano is sourced from Ben Lacey’s vineyard in Seaview (McLaren Vale). The vines are now almost 10 years old, grafted onto 25-year-old Chardonnay rootstocks established in shallow, dark Biscay clay over limestone.
Picked at the end of February, after 16 hours skin contact, the 2022 was lightly whole-bunch pressed into old oak and stainless steel. Fermented naturally, the wines remained on lees (unsulphured) until June before being blended to create this small-batch release.
There’s a lovely and fleshy apple-driven nose with some white blossom and a touch of chalkiness. It’s fresh and packed full of bright flavours and pulpy texture, undercut by livewire acidity and gentle grip. It’s made to accompany warm summer nights and smoky barbequed fish.
