This is the second release of Bondar’s wine equivalent of nitrous oxide (aka laughing gas). This year’s makeup is 55% Cinsault and 25% Grenache, and in ‘22 Andre has included 20% Counoise, a quality southern Rhône variety that is making something of a comeback in its homeland. The Cinsault and Counoise are drawn from Bondar’s exceptional Rayner vineyard, where the soils are deep and sandy. The Grenache is sourced from an organically managed, sandy, south-facing block in Blewitt Springs. So, there is some pretty impressive real estate going into this little number.
With strawberry and raspberry loveliness melting on the tongue, this first-rate Pét Nat is at its most crunchy, dry and delicious.
