Crafted from 60% Mourvèdre, 20% Syrah and 20% Grenache, with a smidge of Viognier co-fermented, the Haut Coustias is the Alary brothers' tour de force; the most distinctive wine of the Domaine. Only 8,000 bottles are produced each year, and the wine is made from 65-year-old vines planted in the rocky, limestone rich, blue clay soils (with 40% active limestone), of the Estate's highest plots. The grapes are sorted (three times) and destemmed, and the wine is naturally fermented in concrete, then spending 24 months in large 22-hectolitre wooden foudres, reminiscent of those found in the cellars of traditional Barolo producers (pictured below).
