Pillot’s Aligoté is drawn from 1.5 hectares of estate-owned vines in Chassagne and across several parcels in the Côte Chalonnaise. Like all the whites here, the grapes are whole-bunch pressed and naturally fermented. This cuvée spends time on its lees (with no stirring) in both stainless-steel tanks and older oak barrels. The tanks preserve freshness, while the barrels give more mid-palate richness and texture. Burgundy’s top growers continue to show us what the Aligoté grape is capable of in the right hands. This crystalline, textured Pillot example will just add more grist to the mill. It’s a delicious, racy drink and a brilliant value.
