While Luke and Rosalind build their own oil mill, the first releases will be processed at Yea under their guidance before travelling to Glenburn to be bottled in the Lambert shed. Of course, we don’t need to say that everything this family releases has that sprinkling of stardust, and their first oil is no different. The making is strictly artisanal: the fruit was crushed within 12 hours of picking to harness the freshness key to this style; it was cold-pressed and briefly settled in the tank with sediment to lock in freshness and the spicy flavour. There was no filtering, bleaching, centrifuging, or aggressive handling as the “hardcore processes can take the life out of the oil”, notes Rosalind.
